Personal Consumer Issues • Genealogy research

I've read through several threads, going back to 2016. Still not sure where to start...

I would like to find information on my grandparents (born in the 1890's) and perhaps their parents. And then perhaps (2nd priority) my cousins with whom I've lost contact.

I am looking for a site with reliable info (NOT crowdsourced) to find the info.
And a site (not necessarily the same one) where I can build a family tree and save it in a standard format (GEDCOM?).
In light of the legitimate privacy (hacking risk) concerns expressed by other Bogleheads, I don't want any of the family tree to be online...just on my hard disk.

What is the best site, or combination of sites?

Thanks!

J
